Thai Pork with Peanut Sauce {in the crock pot!!!}*
*This is so good and so easy that I'm including the recipe:
2 lb boneless pork loin, fat trimmed, cut into 4 pieces
2 large red bell peppers, sliced (green is fine to use)
1/3 cup teriyaki sauce
2 T. rice vinegar
1 t. red pepper flakes
2 cloves garlic, minced
1/4 cup peanut butter
1. Coat slow cooker with nonstick spray. Put everything but the PB in cooker. Cover and cook on LOW until pork is fork-tender. 8-9 hours.

2. Remove pork and coarsely chop. Add PB to liquid. Stir it up. Put the pork back in and stir it up.
3. Serve over rice.
